A traditional Scottish pudding, clootie
dumpling dates back to pre-oven days when most food was cooked
in a pot over an open fire. Ingredients were place in a floured
cloot (cloth) and boiled in water for several hours - hence
the name 'Clootie Dumpling'. Later when cake-making and ovens
became part of every household, the making of Clootie Dumplings
for special occasions continued and as skill was required
to make it successfully, it was generally the senior members
of the family who took responsibility. Usually Granny was
the best Clootie maker and was always very proud to be given
the task. For this reason we adopted 'Granny Clootie' for
our restaurant name and logo.
Our original recipe is a delightful mixture of all that's
good, subtle spices, carrots, apple, raisins, etc, lovingly
maried within a cloot, resulting in a mouth-watering, nutritional
delicacy. The only change we have made to the original recipe
is the use of vegetable fat instead of animal fat which makes
the dumplings suitable for vegetarians. |
